What a treat; having pizza for breakfast.
Well pizza lovers rejoice, because the recipe I am sharing today would also be good as dessert as well! I am having a lot of fun digging back into my Facebook Live recipe vault, and will continue to share various dishes here on the blog, while simultaneously gathering the content for my newest cookbook! Berry Dessert Pizza
For the base
1 1/4 oats
3 tbsp coconut flour
8 pitted medjool dates
4 1/2 tbsp peanut butter
2 tbsp unsweetened almond milk
For the sauce
5 oz extra firm tofu
1/4 cup coconut yoghurt
1/2 large banana
1/4 cup strawberries/blueberries/raspberries (or a combo!)
Add all base ingredients into the bowl of a small food processor. Pulse until the oats and dates have broken down, and the mixture sticks together.
Using your hands or a rolling pin, spread the base out onto a plate, platter, or cookie tray. Pinch up the outer edge to resemble a crust.
Next, add the sauce ingredients to food processor or blender and whirl until smooth. Top pizza with sauce and any toppings you like such as mixed colorful fruit, dried coconut, and chocolate shavings
